Cut from the area of the cow below the backbone, NY strip steaks are tender, lean, and boneless. It has a good amount of marbling, which lends a ton of flavor to this evenly, but it’s not quite as tender as a ribeye or a tenderloin.
These steaks have a nice fat cap that adds extra flavor in cooking and the marbling is well balanced. I have not been disappointed.

The Only Place I will buy a NY Steak
I was never a fan of NY Steaks until I had one from Better Beef. Their beef surpasses most beef that I've tried. Yes, I have gone to other butchers (taste test) and I got mad wasting my money on other butchers! Good Stuff.
